Ingredients
For the Patties
- 1 zucchini (370 g), grated
- 2 potatoes (100 g), grated
- 1 carrot (80 g), grated

- 1–2 eggs (depending on the mixture’s consistency)
- 100 g hard cheese (or mozzarella), grated
- 5 tablespoons all-purpose flour
- A small bunch of parsley, chopped
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
- Black pepper to taste
For the Garlic Herb Sauce
- 2 tablespoons mayonnaise (or yogurt)
- 2 tablespoons sour cream
- 1 garlic clove, minced
- A handful of parsley, chopped
- Salt to taste
Instructions
1. Prepare the Vegetables
- Grate the zucchini, potatoes, and carrot using a coarse grater.
- Place the grated vegetables in a clean kitchen towel and squeeze out as much excess moisture as possible.
2. Mix the Ingredients
- In a large mixing bowl, combine the grated vegetables, minced garlic, eggs, grated cheese, flour, parsley, salt, paprika, and black pepper.
- Stir until everything is well incorporated into a cohesive mixture.
3. Shape the Patties
- Scoop about 2 tablespoons of the mixture and shape it into a patty with your hands.
- Repeat until all the mixture is used.
4. Cook the Patties
- Heat a small amount of oil in a non-stick skillet over medium heat.
- Add the patties to the skillet, cooking for 3-4 minutes on each side until golden brown and crispy.
