Description

These Cheesy Vegetable Zucchini Patties are crispy, cheesy, and packed with nutritious vegetables like zucchini, potatoes, and carrots. Perfect as a snack, side dish, or light meal, these patties pair beautifully with a creamy garlic herb sauce for an irresistible treat.

Ingredients

For the Patties

  • 1 zucchini (370 g), grated
  • 2 potatoes (100 g), grated
  • 1 carrot (80 g), grated
  • 2 cloves of garlic, minced
  • 12 eggs (depending on the mixture’s consistency)
  • 100 g hard cheese (or mozzarella), grated
  • 5 tablespoons all-purpose flour
  • A small bunch of parsley, chopped
  • 1/2 teaspoon salt
  • 1/2 teaspoon paprika
  • Black pepper to taste

For the Garlic Herb Sauce

  • 2 tablespoons mayonnaise (or yogurt)
  • 2 tablespoons sour cream
  • 1 garlic clove, minced
  • A handful of parsley, chopped
  • Salt to taste

Instructions

1. Prepare the Vegetables

  • Grate the zucchini, potatoes, and carrot using a coarse grater.
  • Place the grated vegetables in a clean kitchen towel and squeeze out as much excess moisture as possible.

2. Mix the Ingredients

  • In a large mixing bowl, combine the grated vegetables, minced garlic, eggs, grated cheese, flour, parsley, salt, paprika, and black pepper.
  • Stir until everything is well incorporated into a cohesive mixture.

3. Shape the Patties

  • Scoop about 2 tablespoons of the mixture and shape it into a patty with your hands.
  • Repeat until all the mixture is used.

4. Cook the Patties

  • Heat a small amount of oil in a non-stick skillet over medium heat.
  • Add the patties to the skillet, cooking for 3-4 minutes on each side until golden brown and crispy.
  • Work in batches if necessary to avoid overcrowding the skillet.

5. Prepare the Sauce

  • In a small bowl, mix together mayonnaise (or yogurt), sour cream, minced garlic, chopped parsley, and salt. Stir until smooth.

6. Serve

  • Serve the patties hot with the garlic herb sauce on the side. Enjoy them as a snack, appetizer, or part of a meal!

Notes

  1. Squeeze the Vegetables Well: Removing excess water from the vegetables is essential for crispy patties.
  2. Adjust Consistency: If the mixture feels too wet, add an extra tablespoon of flour.
  3. Cheese Substitutes: Use Parmesan, cheddar, or any other meltable cheese if hard cheese or mozzarella isn’t available.
  4. Cooking Option: For a healthier version, bake the patties at 375°F (190°C) for 20-25 minutes, flipping halfway through.
  5. Freezing Tip: Shape uncooked patties, freeze them on a baking sheet, and transfer to a freezer bag. Cook directly from frozen when needed.
