Description

Soft dinner rolls stuffed with shredded chicken in a creamy, spiced sauce, layered with gooey mozzarella and cheddar cheese, and topped with buttery herb goodness. These sliders are baked to golden perfection, making them a crowd-pleasing appetizer or main dish.


Ingredients

For the Chicken Filling:

  • 400g boiled and shredded chicken
  • 1–2 tablespoons oil
  • 1 tablespoon chopped garlic
  • 1/2 cup chopped onion
  • 1 cup chopped bell pepper
  • 1 teaspoon salt (or to taste)
  • 1 teaspoon black pepper powder
  • 1 teaspoon paprika powder
  • 1 tablespoon soy sauce
  • 2–3 tablespoons mayonnaise

For Assembly:

  • 12 dinner rolls
  • Tomato ketchup, as needed
  • Grated mozzarella cheese, as needed
  • 12 cheddar cheese slices

For the Herb Butter:

  • 4 tablespoons unsalted butter, softened
  • 1 tablespoon finely chopped parsley
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt

Instructions

1. Prepare the Herb Butter

  • In a small bowl, mix 4 tablespoons softened unsalted butter, 1 tablespoon finely chopped parsley, 1/2 teaspoon garlic powder, and 1/4 teaspoon salt.
  • Stir until well combined and smooth. Set aside.

2. Cook the Chicken Filling

  • Heat 1-2 tablespoons of oil in a skillet over medium heat.
  • Add 1 tablespoon chopped garlic and sauté until fragrant (about 1 minute).
  • Add 1/2 cup chopped onion and 1 cup chopped bell pepper. Cook for 3-4 minutes until softened.
  • Stir in the shredded chicken, 1 teaspoon salt, 1 teaspoon black pepper powder, and 1 teaspoon paprika powder. Mix well and cook for 2-3 minutes.
  • Add 1 tablespoon soy sauce and stir.
  • Finally, mix in 2-3 tablespoons mayonnaise for a creamy texture. Remove from heat and let the filling cool slightly.

3. Assemble the Sliders

  • Preheat your oven to 350°F (175°C).
  • Slice the 12 dinner rolls in half horizontally, keeping the tops and bottoms connected.
  • Spread a thin layer of tomato ketchup on the bottom halves of the rolls.
  • Evenly distribute the chicken filling over the ketchup layer.
  • Sprinkle grated mozzarella cheese on top of the chicken filling, followed by a slice of cheddar cheese for each roll.

4. Bake the Sliders

  • Place the top halves of the rolls over the cheese.
  • Generously brush the tops of the rolls with the prepared herb butter.
  • Arrange the sliders in a baking dish or on a baking sheet. Cover loosely with aluminum foil to keep the rolls moist while baking.
  • Bake for 10-15 minutes, or until the cheese has melted and the sliders are heated through.
  • Remove the foil and bake for another 5 minutes to create golden, crispy tops.

5. Serve the Sliders

  • Take the sliders out of the oven and let them cool for a minute.
  • Serve warm, straight from the baking dish, and enjoy the cheesy, buttery goodness with your favorite sides.

Notes

  • You can use store-bought rotisserie chicken instead of boiled chicken for convenience.
  • For a spicy twist, add diced jalapeños or red pepper flakes to the chicken filling.
  • Leftover herb butter can be stored in the refrigerator and used on toast or grilled vegetables.
