  • Yield: 10–12 bars

Description

This Super Energy Dessert is the ultimate no-bake, no-sugar, no-egg recipe for a healthy, indulgent treat. Packed with dried apricots, nuts, and seeds, it’s naturally sweetened and perfect for a snack or dessert. With the added richness of sugar-free chocolate and the crunch of pecans, these bars are as delicious as they are energizing. Simple, quick, and healthy, this dessert is perfect for anyone looking for a wholesome boost.

Ingredients

  • 150 g dried apricots
  • 100 g peanuts
  • 50 g almonds
  • 50 g hazelnuts
  • 30 g sesame seeds
  • 60 g sugar-free chocolate
  • 30 g pecans (for decoration)

Instructions

Prepare the Ingredients

  • Chop the dried apricots into small pieces and set them aside.

Process the Nuts and Seeds

  • In a food processor, add the peanuts, almonds, hazelnuts, and sesame seeds.
  • Pulse the mixture until it reaches a coarse, crumbly texture. Avoid over-processing to maintain a crunchy consistency.

Combine with Apricots

  • Add the chopped dried apricots to the food processor with the nut mixture.
  • Process until the ingredients combine and the mixture begins to stick together.

Melt the Chocolate

  • Place the sugar-free chocolate in a microwave-safe bowl.
  • Heat in 30-second intervals, stirring in between, until fully melted and smooth.

Mix Everything Together

  • Pour the melted chocolate over the apricot and nut mixture.
  1. Mix thoroughly until the chocolate is evenly distributed and the mixture sticks together.

Shape the Dessert

  • Line a small rectangular or square pan with parchment paper.
  • Press the mixture firmly into the pan, ensuring an even layer.

Decorate with Pecans

  • Place pecans on top of the mixture, gently pressing them in for decoration.

Chill and Set

  • Refrigerate the pan for about 1 hour, or until the mixture is firm and set.

Cut and Serve

  • Once firm, remove the dessert from the refrigerator and cut it into squares or bars.
  • Serve chilled and enjoy!

Notes

  • Softening Dried Apricots: If the apricots are hard, soak them in warm water for 5–10 minutes before chopping.
  • Storage: Keep the bars in an airtight container in the refrigerator for up to one week.
  • Customization: Feel free to swap out nuts, seeds, or dried fruits to suit your taste or dietary preferences.
  • Serving Tip: These bars taste best when served cold.
