Ingredients

For the Broccoli Dish:

  • Olive oil: for sautéing
  • Garlic: 2-3 cloves, minced
  • Onion: 1, chopped
  • Carrot: 1, chopped
  • Potatoes: 3, peeled and chopped
  • Broccoli: 1 head, chopped
  • Vegetable broth: 750 ml (3 cups) (or chicken broth)
  • Salt: to taste
  • Black pepper: to taste
  • Cream: 200 ml (1 cup)
  • Parmesan cheese: grated, to taste
  • Parsley: chopped, for garnish

For the Croutons:

  • Bread: sliced
  • Olive oil: for drizzling
  • Salt: to taste
  • Black pepper: to taste
  • Smoked paprika: to taste
  • Herbs of Provence: to taste

Instructions

Step 1: Prepare the Homemade Croutons

  • Preheat your oven to 180°C (350°F).
  • Cut the sliced bread into small cubes.
  • Spread the bread cubes on a baking sheet and drizzle lightly with olive oil.
  • Season with salt, black pepper, smoked paprika, and Herbs of Provence. Toss well to coat evenly.
  • Bake for 10-15 minutes or until golden and crisp. Remove and let cool.

Step 2: Make the Broccoli Dish

  • Heat olive oil in a large pot over medium heat.
  • Add the minced garlic and chopped onion. Sauté until the onion becomes translucent.
  • Stir in the chopped carrot and potatoes. Cook for 3-4 minutes, stirring occasionally.
  • Add the chopped broccoli and vegetable broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the vegetables are tender.
  • Use an immersion blender to blend the soup into a smooth, creamy consistency. Alternatively, use a regular blender in batches.
  • Stir in the cream, then season with salt and black pepper to taste. Heat gently, but do not boil.

Step 3: Serve and Garnish

  • Ladle the broccoli mixture into serving bowls.
  • Sprinkle each bowl with grated Parmesan cheese and freshly chopped parsley.
  • Top with homemade croutons for added crunch and flavor.

Notes

  • For extra creaminess, add a splash of milk or more cream when blending.
  • If you like your soup chunkier, blend only half of the mixture and leave the rest intact.
